A healthy alternative to Pizza

Want to try a yummy pizza inspired dish?  

A new vegetarian (could be vegan) recipe for you!

Clayton and I really enjoy this meal.  It is filling, nutrisious and a great way to mix it up a bit.

Eggplant Pizzas

You need:
1 Eggplant
1 onion
1 sliced tomato
Spinach
Whole wheat pasta
1 jar of your favorite pasta sauce (or make your own)
Motzarella cheese (Vegan cheese if that more your style)

What you do:
Slice the eggplant into 1" thick rounds
Place in a bowl and add a bit of olive oil, salt, and pepper.  Toss around until well coated.
Spray a baking sheet with a bit of cooking spray 
Place eggplant on the baking sheet 
Bake at 400 degrees for 15 minutes, flip them over and back in the oven they go for 15 more minutes.

While the eggplant cooks:
Chop the onion
Saute in a bit of olive oil until soft
Add spinach, allow to wilt
Add pasta sauce and mix it all around
Keep the sauce on low, stir it often to make sure it doesn't burn

If you would like pasta with this dish, prepare your favorite whole wheat noodles.

Once the eggplant is done, remove from the oven.
Place a spoon full of pasta sauce on each eggplant slice.
Then place one tomato slice on top and sprinkle with a bit of cheese
Back in the oven they go.

But only until the cheese melts, watch them!

To serve:
Place pasta on plate, top with sauce
Serve with a couple Eggplant pizza's
