A Temptation on the $10 challenge

So how is it going?  Have you committed to the $10 challenge?  Are you struggling?  Are you succeeding?

I am doing both, struggling and succeeding.


Today is DAY 3 and my biggest temptation thus far came my way around 6pm tonight.  Dinner........

We love this yummy pizza place, Trilogy.  They have a whole wheat pizza crust, fresh toppings and happy hour wine and beer.  It is always a lovely treat and satisfies our pizza craving.  And that is exactly what I wanted tonight, Trilogy Pizza!!!

So what is a girl to do?  After talking it over with Clayton we decided that going for a dinner out would be breaking the rules.  It would obviously cost more than the $10 limit I set for myself this week.  And  even though he would pick up the tab it was still a stretch and borderline cheating on  the challenge.

So we opened up the fridge and saw a beautiful abundance of blessings, vegetables, fruits, and plenty of food to build a healthy, satisfying dinner.  And that is just what we did. I couldn't help but count my blessings and all that God provides for us.  We have plenty, forget pizza!

Instead of going out, spending $30 on pizza and drinks and breaking the challenge I threw together a delicious dinner.

Indian inspired lentils
All you need:

1 onion, 1 can of diced tomatoes, garlic, 1 cup of red lentils, garam marsala, tumeric, salt, Naan bread

Cook chopped onion, garam masala, tumeric, salt and garlic until onions are cooked through.  

Meanwhile cook the lentils (2 cups of water/1 cup of lentils) for about 10 minutes or soft.

Combine together and let simmer for 5 minutes.

Serve with rice or Indian Naan

Not only was it delicious, but we completely forgot about our pizza craving and still on track for the $10 challenge.
