Quinoa Stuffed Peppers

Looking for a fantastic Vegan recipe this week?  I am happy to share with you.....

Quinoa Stuffed Peppers


What you need:
2 Bell peppers
1/2 chopped onion
1/2 cup of uncooked quinoa
1 cup of edamame
1 tomato
Handful of spinach
soy sauce
Small Pyrex baking dish

What you do:

Preheat oven to 375 degrees

Cook your quinoa as recommended (1/2 cup of dry to 1 cup of water).  Bring to a boil and then simmer covered for 10 minutes. Set aside.

In a pan saute onion, edamame, and tomato until combined together and onion cooked through.

Combine quinoa with the veggie mixture and add soy sauce.  As much as you would like to please your taste buds.

Cut the tops off your peppers and scoop out the inside and seeds.

Stuff the peppers with the quinoa vegetable mixture.  Place in your baking dish and add about 1/2 cup of water so the peppers don't burn.

Cover with foil and place in oven for 25 minutes.

Remove foil and continue to back for another 25 minutes or until peppers are soft and cooked through.

Feel free to substitute grains, add beans, change up the vegetables etc.  Stuffed peppers are so versatile, full of great nourishing food and made easy to please any crowd.
